Nigara Aogami Super Migaki Tsuchime 240mm Gyuto

If you're in search of a Damascus-clad kitchen knife that embodies over 350 years of smithing experience, Nigara Hamono is the destination. Based in Aomori prefecture in Northern Japan, Nigara Hamono's expertise extends beyond cutlery, as they also craft steel beams for buildings.

Aogami Super Carbon Steel Core

For those who prefer a carbon steel core, Nigara offers the fan-favorite Aogami Super Carbon Steel. This knife features a unilateral migaki finish and a very distinct tsuchime (hammered) pattern. If shades of gray appeal to you, this knife offers three of them.

The 240mm Gyuto: A Conundrum with No End

The 240mm gyuto is a subject of endless fascination. Those who love this particular length will passionately express their obsession. With 30mm extra compared to the typical 210mm gyuto, the 240mm version is perfect for those with bigger hands, larger kitchens, and grander tasks. A gyuto is already versatile, but at 240mm, its versatility knows no bounds. And don't dare say it's too large to slice garlic, because a 240mm gyuto lover will prove you wrong!

Loving this knife!

Recently purchased this blade and a shattered carbon handle and I’m VERY pleased. It’s not a “laser” but it cuts wonderfully. The knife feels great in hand and has an excellent fit and finish. Aesthetically it’s beautiful. After the first use the Aogami Super core developed a deep blue/purple patina that almost looks black from a distance. I would recommend this knife to anyone looking to add a knife that’s both a pleasure to use and to look at. Big thanks to the guys at Tokushu Knife for their excellent service and teleporter like shipping.
