Steel, Construction and Care

Our catalog includes stainless, semi-stainless and carbon steels selected for edge performance and durability. Carbon steels may develop a patina, while stainless steels are designed to resist discoloration. Follow the care guidance on each product page, hand wash only and dry the knife promptly after use.

Pure perfection

This is an absolutely beautiful addition to any knife nerd's collection. All of Nakagawa's knives are works of art, but this outshines them all. (Literally). The mirror finish is present even after a protein patina, the height and heft make it authoritative with produce, and the convex grind does a great job with food release. Truly the definition of functional art.

I also have to give a HUGE shout out to Tony and his team for some truly impeccable customer service during the process, and not stopping until they got every aspect of the handled knife perfect. Highly recommended and I will be back for more from Tokushu!

The knife is actually better than depicted! And, Tony is a pleasure to deal with. I couldn't recommend Tokushu Knife more strongly!
