Overview
The Masuda Yoshihide Blue #1 Kurozome Damascus Gyuto 240mm pairs a Japanese carbon steel blade with a custom Prisma wenge handle and a pale faux ferrule. Dark, flowing grain in the handle echoes the blade's contrasting Damascus pattern, while a narrow red spacer adds a restrained accent.
Made in Sanjo, Japan, this gyuto has an Aogami #1 core and soft iron Damascus cladding. Its Kurozome finish gives the upper blade a dark backdrop against the brighter lower bevel. The 240mm size offers generous cutting length for larger vegetables, boneless proteins, and longer slicing strokes.
Choose this knife if you enjoy the character of carbon steel and have room for a longer chef's knife on your board. The gallery shows the pictured knife from both sides, along with its blade detail, choil, and box label.
Common Questions
Is a 240mm gyuto suitable for home cooks?
Yes, if you are comfortable using a longer knife and have a spacious cutting board. Its reach is useful for large produce and meal preparation. A 210mm gyuto may feel more manageable in a compact kitchen.
Is Blue #1 steel stainless?
No. Both the Aogami #1 core and soft iron cladding can develop patina and rust. Wipe the blade during preparation, hand wash after use, and dry it thoroughly. Never leave it soaking or put it in the dishwasher.
How should I maintain the blade and handle?
Use controlled cuts on a knife-friendly board, such as a Hasegawa cutting board. Avoid bones, frozen food, and twisting the edge in a cut. Keep the wenge handle dry, maintain the edge with appropriate whetstones, and apply a light coat of tsubaki oil to the clean, dry blade before extended storage. Abrasive scrubbing can alter the dark finish.
