Overview
The Hatsukokoro Hinotori V-Toku2 Rainbow Damascus Gyuto 240mm is a bold, high-performance Japanese chef knife built for cooks who want elite cutting feel with unforgettable visual impact. Its V-Toku2 carbon-steel core offers crisp feedback, strong edge retention, and excellent sharpening potential. Stainless rainbow Damascus cladding with copper and brass tones creates the line’s distinctive fire-like movement across the blade.
The 240mm gyuto profile gives serious home cooks, line cooks, and professional chefs extra draw length for proteins, herbs, and large vegetables without sacrificing agility. Thin geometry and a fine edge make this a legitimate performance knife as well as a visual centerpiece.
Choose Your Handle Configuration
Amboyna Burl Handle: A complete knife fitted with a Tokushu Knife special-edition Amboyna burl and buffalo horn wa handle.
Blade Only: Supplied without a handle for collectors, custom builders, or customers who want to select their own wa handle. Professional fitting may be required. The blade-only photographs show the configuration you will receive.
Common Questions
Q: What is V-Toku2 steel like compared with Blue #2?
A: V-Toku2 is often compared with Blue #2 because it offers a similarly responsive carbon-steel cutting feel, strong edge retention, and excellent sharpness potential.
Q: Is a 240mm gyuto suitable for home cooks?
A: Yes, especially for cooks comfortable with a full-size chef knife. The extra blade length is useful for large produce, proteins, and efficient prep while the fine tip still supports detailed work.
Q: What does blade only mean?
A: The blade-only variant arrives without a handle installed. It is intended for custom wa-handle installation, and professional fitting may be required.
Care and Maintenance
Wash by hand, dry fully immediately, and never leave the knife wet or place it in a dishwasher. The exposed V-Toku2 edge is reactive and can form a patina. For longer storage, apply a light coat of tsubaki oil. A Hasegawa Pro cutting board and gentle maintenance on the Tokushu Knife Premium XL leather strop help protect the fine edge.
