The Hatsukokoro Ginga ATS34 Damascus Santoku 180mm brings a striking polished blade to everyday prep. Made by Yoshihiro Yauji in Takefu, Japan, the Ginga combines an ATS34 stainless-steel core with stainless Damascus cladding. Its flowing pattern catches the light, while the compact santoku profile handles vegetables, boneless meat and fish. This knife includes the fitted Sanjo wa handle shown in the photos.
The broad blade offers useful working space for chopping and scooping prepared ingredients, and the curved front of the edge accommodates a gentle rocking motion. Rounded, polished spine and choil surfaces provide a comfortable place for a pinch grip. Common Questions
Is the Ginga ATS34 santoku stainless?
Yes. Both its ATS34 core and Damascus cladding are stainless. It still needs hand washing and prompt drying; stainless steel resists corrosion but is not immune to it.
What is a santoku knife used for?
A santoku is an all-purpose kitchen knife for slicing, dicing and chopping vegetables, boneless meat and fish. This 180mm model offers more compact handling than a typical 210mm or 240mm gyuto. Avoid bones, frozen food and twisting the edge in a cut.
Does this knife come with a handle?
Yes. The photographed octagonal Sanjo wood wa handle is fitted and included. Its natural grain and contrasting spacer complement the Damascus blade.
How do I maintain the edge and finish?
Cut on a knife-friendly surface, such as a Hasegawa cutting board. Clean with a soft sponge and mild detergent, dry immediately and avoid abrasive pads on the polished Damascus. Use whetstones when sharpening is needed, or choose our knife sharpening service. Do not soak the handle or put the knife in a dishwasher.
