Absolute stunner!

I have no notes on this knife! Absolute laser, food release is better than average for something so thin, and a perfect size for nimble and precise cuts. The price for value is off the charts, and I couldn't be happier to have this in my collection!

Shibata Koutetsu 195 mm

Wow, what a laser and it is now the thinnest blade I own and perhaps even the sharpest, though my three Denka series blades and my Shigefusa give it a run for its money. I would add that the Shibata is delicate and if you're not used to using super-thin blades, this may not be the best choice. With that said, if you're cutting mostly veggies and/or boneless meats, it's a wonderful choice; moreover, it's downright cheap for the sheer performance that it delivers. I'm very pleased I bought it.
