Este cuchillo ofrece una oportunidad única, ya que los cuchillos de un solo bisel no suelen estar disponibles en Saji-san. Uno de los tres principales cuchillos básicos de la cocina japonesa, el deba. Un deba de un solo bisel será tu opción para filetear pescado. Su lomo increíblemente grueso le da resistencia al filo de la hoja y al mismo tiempo mantiene el filo del bisturí debido a la geometría de su filo. Personalmente, ningún sonido es más placentero que cuando un deba recorre sin esfuerzo las costillas de un pescado. Nos recuerda al sonido de unas fichas de dominó colocadas con mucha habilidad.
