Masakage Zero Stainless Clad Aogami Super Tsuchime Gyuto 240 mm
Hand-forged by Takeshi Saji • Final-sharpened by Takayuki Shibata • Premium desert-ironwood handle
Overview
The Masakage Zero series is Saji-san’s statement piece: an Aogami Super core wrapped in easy-care stainless cladding and finished with a deep tsuchime hammer texture that keeps food from sticking. At 240 mm, this gyuto glides through prep work while its 52 mm heel height offers generous knuckle clearance. The full-tang desert-ironwood handle adds western heft and striking mosaic-pin accents, giving you a blade that’s as bold on the board as it is in the block.
Common Questions
Q: Is this gyuto practical for home cooks as well as pros?
A: Absolutely. The stainless cladding shrugs off kitchen humidity, while the Blue Super edge holds an aggressive sharpness—so you spend more time cooking and less time sharpening.
Q: Does “stainless clad” mean the knife is completely rust-proof?
A: The core edge is high-carbon, so wipe it dry after use. The cladding shields 90 % of the blade, dramatically reducing maintenance compared to full-carbon knives.
Q: What’s the best way to keep an Aogami Super edge scary sharp?
A: Between sharpening sessions us diamond Strop Shots on strop every few weeks for razor retention.
