Overview
The Hatsukokoro Kurogane Blue #2 Kurouchi Honesuki 150mm is a purpose-built Japanese poultry knife made in Tosa for cooks who value function, control, and honest value. Its stiff triangular blade and pointed tip help you follow a carcass, open joints, separate cartilage, trim tendons, and remove meat from bone with less waste.
The Kurogane combines an Aogami Blue #2 carbon-steel core with reactive soft-iron cladding and a traditional kurouchi finish. A thick spine and slightly convex workhorse grind give the blade the strength and positive feedback expected from a honesuki, while the double-bevel edge makes this model comfortable for either right- or left-handed cooks. The mono ebony octagonal wa handle adds density, balance, and a clean understated finish.
Our Professional Assessment
In our professional opinion, this is a very effective tool at a genuinely good price. It is an affordable working knife from Tosa, built to break down poultry reliably rather than showcase highly polished cosmetic finishing.
This is not the right knife for someone who is particular about perfectly even kurouchi, polished choils, rounded spines, uniform hammer marks, or flawless cosmetic consistency. The rustic forging and finishing are part of the package. Buy it for its useful geometry, sturdy construction, responsive Blue #2 edge, and excellent value—not for luxury fit and finish.
How a Honesuki Works
A honesuki is different from a flexible Western boning knife. Its rigid blade gives you direct control when tracing bones and locating joints. The narrow tip handles precise work, while the strong heel is useful for scraping meat from bone and cutting through connective tissue or poultry cartilage.
This knife is designed to work around bone. It should not be used to chop through hard bones, frozen food, or dense shells.
Common Questions
What is a honesuki knife used for?
A honesuki is primarily used for breaking down chicken, duck, rabbit, and other small proteins. It excels at joint work, trimming tendons, separating cartilage, and removing meat from bone.
Can this honesuki cut through chicken bones?
No. Use the pointed tip to locate the joint and cut through cartilage. Do not swing or force the blade through hard bone.
Is this honesuki suitable for left-handed cooks?
Yes. This Kurogane uses a double-bevel grind and can be used in either hand.
Is the Hatsukokoro Kurogane stainless?
No. Both the Blue #2 edge and soft-iron cladding are reactive. A natural patina will develop, and the blade can rust if left wet. Hand-wash it, dry it immediately, and apply food-safe knife oil before extended storage.
Who should buy this knife?
Choose it if you want an affordable, practical Japanese poultry knife and care more about cutting performance than cosmetic perfection. Choose a more refined line if polished fit and finish is a priority.
