Kiritsuke knives are highly versatile, blending the functions of both a Nakiri and Sujihiki. Traditionally reserved for executive chefs in Japanese kitchens, Kiritsuke knives offer a long, lightweight, and double-bevel edge, making them ideal for precision slicing, dicing, and push-cutting.

Unlike Gyuto knives, Kiritsuke blades have less curvature, making them less suited for rock-chopping but excellent for push cuts and pull cuts. Some designs feature a profile similar to a single-bevel Kiritsuke, while others resemble a tall Nakiri with a clipped point or a hybrid Gyuto-Kiritsuke fusion. This unique geometry allows for efficient slicing with a straight edge, offering control and accuracy for both professional chefs and serious home cooks.
