The Yu Kurosaki Gekko VG-XEOS Gyuto 240mm (No Handle) is a bare blade from one of Echizen’s most sought-after smiths, designed for cooks and makers who want Kurosaki performance with a fully custom handle. Forged in Takefu Knife Village, the Gekko (“moonlight”) line pairs a super-refined gyuto profile with a highly polished migaki finish that catches light like a calm night sky.
At its core is VG-XEOS, a next-generation stainless steel from Takefu Special Steel. Hardened to roughly 61–62 HRC and clad in softer stainless, it delivers excellent edge retention, high corrosion resistance, and a fine, crisp edge that still feels surprisingly tough in daily use. In a 240mm gyuto format, you get generous blade height for knuckle clearance, a thin spine around 2mm at the heel, and a grind that feels very close to “laser” while maintaining enough meat in the spine for confidence on denser prep.
