Features
The blade is made from Yasuki Silver #3 (Ginsan) steel, a stainless carbon steel known for excellent edge retention and ease of sharpening. It is clad in soft stainless steel with a traditional San Mai construction, offering durability and easy maintenance. The blade has a hardness of 62±1 HRC, ensuring superior cutting performance.
The Kasumi-polished blade offers smooth, efficient cutting, while the polished choil provides comfort during long use. With a double-edged 50/50 grind, this Kiritsuke Gyuto is versatile for various kitchen tasks. Please note, this knife comes without a handle, allowing you to add a custom handle of your choice.
