Overview
The Tetsujin Blue #2 So-Kasumi Sujihiki 210mm is a compact Japanese slicing knife with a traditional, gently curved tip. Forged by Toru Tamura and sharpened by Naohito Myojin, it combines an Aogami #2 carbon steel core, soft iron cladding, and a soft kasumi finish. The narrow blade gives you control when slicing boneless meat, portioning fish, or trimming smaller cuts.
Choose Prisma Handle for the complete knife pictured, fitted with a custom wood-and-resin wa handle featuring a copper-orange ferrule, pale figured wood, and dark teal resin. The photographed handle is the actual handle supplied with that option. Choose Blade Only for an unhandled blade ready for a compatible wa handle and professional fitting.
Common Questions
What is a 210mm sujihiki used for?
Its compact length suits smaller portions of boneless meat and fish, precise trimming, and slicing tasks where a longer knife feels cumbersome. Use smooth pull cuts and a knife-friendly cutting board. Avoid bones, frozen food, twisting, and prying.
Is this the kiritsuke version?
No. This model has the traditional sujihiki tip shown in the photos. It is a double-bevel knife, suitable for both right- and left-handed cooks.
Does the blade-only option include a handle?
No. It includes the unhandled blade. Explore our Prisma custom wa handles and contact Tokushu Knife about compatibility and fitting before choosing a separate handle. The Prisma Handle variant already includes its installed handle.
How do I care for Blue #2 carbon steel?
The carbon steel core and iron cladding develop a patina and can rust if left wet. Wipe the blade during use, hand wash, and dry immediately. Do not soak or put it in the dishwasher. For storage, use a light coat of tsubaki knife oil.
