Overview
The Teruyasu Fujiwara Denka Aogami Super Gyuto 240mm (Wa) is the sweet spot for power and precision. Hand-forged in Tokyo by Master Fujiwara, the Denka line uses his proprietary Aogami Super core, heat-treated to an elite ~65–66 HRC, then stainless clad and finished in rustic kurouchi with light tsuchime. Expect a screaming-sharp edge, long-lasting bite, and that unmistakable Denka character. At 240mm, it gives you extra knuckle clearance and effortless draw cuts while staying surprisingly nimble.
Care is straightforward: wash, dry, and protect the edge with a thin coat of tsubaki (camellia) oil. For daily board work, pair it with a Hasegawa Pro cutting board. Prefer pro-level sharpness on day one? Add our Knife Sharpening Service, then keep it tuned with a few light passes on the Tokushu XL Buffalo Leather Strop. If you score a piece with Fujiwara’s signature finger notch, comfort and control jump even higher.
Common Questions
Q: Is 240mm too big for home kitchens?
A: Not at all. The extra length makes slicing proteins and large veg effortless, yet Denka’s thin grind stays nimble for garlic and herbs. It’s a “one-knife” solution for many cooks.
Q: Is Aogami Super stainless?
A: The core is carbon steel (not stainless) and will patina; the cladding is stainless to reduce maintenance. Wash and dry promptly, and apply a touch of tsubaki oil for storage or long shifts.
Q: What makes Denka different from other AS knives?
A: Fujiwara’s in-house forging and high hardness (~65–66 HRC) deliver elite edge stability, crazy sharpness, and standout food release with that distinctive kurouchi/tsuchime finish.
Q: I’ve heard the fit and finish is rustic—should I worry?
A: It’s part of the Denka identity. Many enthusiasts lightly polish the spine/choil for custom comfort—an easy DIY upgrade that pairs perfectly with the knife’s performance.
