Well, Moritaka Hamono comes close to that fantasy, having forged swords and now kitchen knives on the islands of Okinawa for the last 725 years and 31 generations of experience.

About the knife: This honesuki features a core of Aogami #2 (Blue #2) steel wrapped in a kurouchi finish. Known for its toughness and excellent edge retention, Blue #2 is a favorite among acclaimed makers like Anryu, Konosuke, and Saji. These qualities make it an ideal choice for a workhorse knife, particularly suited to the demands of a honesuki.

The honesuki is Japan’s answer to a Western poultry boning knife. Its rigid spine, precision-oriented k-tip, and tough heel make it perfect for working through cartilage and deboning. Perfect shape

The shape on the moritaka honesuki is near perfect to me. It has a pretty flat edge with a slight belly and a fine tip. I ended up thinning the primary bevel which helped the knife glide through chicken easier when processing.
