Yoshimi Kato Aogami Super Steel 210mm Gyuto with Nashiji Finish
If names like Takeshi Saji and Katsushige Anryu are synonymous with the founding of Takefu Knife Village, then Yoshimi Kato represents the brilliant next generation of smiths from Echizen. Known for his hand-forged blades and very clean designs, Kato's craftsmanship reflects the evolution of traditional Japanese blacksmithing.
This knife features a core of aogami super (blue paper super steel), highly favored by knife enthusiasts for its exceptional sharpness and durability. It is clad in a nashiji finish, also known as a pear skin finish, offering a beautifully textured gray blade that complements virtually any handle style.
The 210mm gyuto is one of the most popular styles and lengths, perfectly balancing versatility and precision. Ideal for both home cooks and professional chefs, this size is akin to a perfectly fitting shoe that accommodates you comfortably, even when your needs change - a testament to its adaptability in any kitchen scenario.
