The Hinokuni Aogami Super Kurouchi Gyuto 210mm is a hardworking, no-nonsense wa-gyuto from Kumamoto. Hand-forged with an Aogami Super (Blue Super) carbon steel core and clad in iron with a traditional kurouchi (black) finish, it brings excellent edge retention, bite, and food release in a rugged, rustic package. Expect a confident, slightly thicker spine at the heel that tapers quickly, an agile tip, and a balanced, mid-weight feel—ideal for push cuts through onions, protein trimming, and precise tip work.

Q: Is this knife suitable for home cooks?
A: Absolutely. It’s tough, easy to maintain (for carbon steel), and very rewarding to sharpen. If you’ll wipe it dry during use and after washing, you’ll love the performance upgrade over entry-level stainless knives.
Q: Will it rust?
A: The Aogami Super core is reactive and will form a protective patina over time. Hand-wash only, dry immediately, and store dry. For longer storage, apply a light coat of Tsubaki (camellia) oil.
Q: How do I keep the edge screaming sharp?
