Hatsukokoro Forged Frying Pan
Hatsukokoro, a reputable Japanese knife brand, has made a frying pan? One whose handle can be removed making it super convenient for storage and travel? The rumours are indeed true! 24cm of Niigata Japan craftsmanship made from 100% pig iron.
And no that isn't a typo. Pig iron is also known as crude iron. A raw iron obtained by smelting iron ore. Pig iron has a very high carbon content, and like most cast iron pans, will tarnish and oxidize if not cared for appropriately. The handle works on tension and is easy to assemble and disassemble.
To avoid warping, it is best on any type of stove especially electric, to gradually bring up the temperature whether wanting to achieve a high or lower heat.
Treat these pans like mini woks. Heat, oil, coat, toss oil, heat again, cook or hold for service in the oven while the handle remains cool on the counter.
Store dry and lightly coat the pan with a food grade oil to prevent rusting.
