The Teruyasu Fujiwara Maboroshi Gyuto 195mm (Wa) blends a razor-keen Shirogami #1 core (approx. 64–65 HRC) with stainless cladding and a hand-hammered tsuchime finish—classic Fujiwara performance with easier day-to-day care. At 195mm, this “in-between” length hits a sweet spot: more board coverage than a santoku, more agility than a 210, and a tall heel for confident knuckle clearance. The octagonal ho wood/buffalo horn handle keeps the balance lively for precise tip work and effortless push cuts. Dry the edge after use (the core is carbon steel) and you’re rewarded with exceptional sharpness, easy resharpening, and that signature Maboroshi bite.
