The Teruyasu Fujiwara Denka Aogami Super Gyuto 195mm (Wa) is a compact, high-octane performer from Tokyo’s master blacksmith, Teruyasu Fujiwara. Denka is his flagship line: an in-house forged Aogami Super core hardened to about 65–66 HRC, clad in stainless for easier day-to-day care. Expect outrageous bite, long edge life, and that signature rustic kurouchi + subtle tsuchime aesthetic that looks as serious as it cuts.
At 195mm, it lands between a 165mm santoku and a 210mm gyuto—fast, nimble, and extremely versatile for tight boards or pro prep lines.
