Overview
If you’re looking for a compact, nimble petty that handles protein work, detail prep, and quick utility cuts with ease, the Dao Vua V3 52100 Carbon Steel 120mm Petty is a fantastic lightweight workhorse. Hand-forged in Hanoi, Vietnam from U.S.-sourced 52100 carbon steel, this knife delivers a thin, precise edge and excellent tactile feedback, all wrapped in the rustic character Dao Vua is known for.
This 120 mm petty features the same V3 formula—monosteel 52100, kurouchi finish, and an octagonal ebony-and-padauk handle—but in a size that excels at trimming proteins, slicing garlic, breaking down small fruit, and handling little board tasks where a gyuto feels oversized. With its thin spine (about 1.36 mm at the heel tapering to 0.55 mm near the tip) and modest 29.25 mm heel height, it behaves like a mini laser designed for speed and control.
As a high-carbon steel knife, it will develop a patina and can rust if left wet. A quick wash, thorough dry, and a light coat of tsubaki oil will keep it protected between uses.
Common Questions
Q: What can I use a 120mm petty for?
A: This size is perfect for trimming silver skin, portioning small proteins, slicing shallots and garlic, cutting citrus, prepping herbs, or doing in-hand fruit work. It’s a versatile knife for both prep and plating.
Q: Is this petty good for home cooks?
A: Absolutely. It’s easy to maneuver, stays sharp with minimal fuss, and fills the gap between a paring knife and a full-size chef’s knife. Many home cooks find a 120mm petty becomes their go-to for everyday tasks.
Q: Does 52100 carbon steel rust easily?
A: It’s reactive, so it can rust if left wet or dirty. To avoid issues: hand wash, dry immediately, and apply a thin coat of blade oil. Over time it will build a dark, protective patina that helps resist corrosion.
Q: How should I maintain the edge?
A: 52100 sharpens quickly and easily. A few passes on a medium stone and a quick touch-up on a leather strop will keep it performing at its best. If you want a perfect edge right out of the box, consider our sharpening service.
