Overview
The Yu Kurosaki Kokusen AS Nakiri 165mm is a tall, nimble Japanese vegetable knife forged in Echizen, Japan. Its broad rectangular profile and flatter edge are designed for controlled push cuts, chopping and clean transfer of prepared ingredients.
The blade pairs an Aogami Super (Blue Super) carbon-steel core with stainless cladding and Kurosaki-san’s distinctive Kokusen hammered finish. The hard core takes a keen edge and holds it well, while the thin grind moves efficiently through vegetables.
This listing is for the blade only. No handle is included. The exposed tang is ready for a compatible custom wa handle; professional installation is recommended.
The exposed carbon-steel edge is reactive and will develop a natural patina. Hand wash only, wipe dry promptly during use and never place the blade in a dishwasher. Avoid bones, frozen foods and twisting cuts.

Is a handle included?
No. This product includes the finished blade and tang only, giving you the freedom to select and fit a custom wa handle.
What is a Nakiri best used for?
A Nakiri is purpose-built for vegetables. Its tall blade, generous knuckle clearance and flatter edge excel at push cutting, chopping herbs and slicing produce.
Is the blade fully stainless?
No. The cladding is stainless, but the exposed Aogami Super core at the cutting edge is carbon steel. Keep it clean and dry to prevent rust.
How should I maintain the edge?
Use a quality whetstone or regular stropping for maintenance. Always cut on a knife-friendly wood or synthetic board and avoid glass, stone and bamboo cutting surfaces.

Knives sharpened by Tokushu Knife or fitted with a custom handle remain eligible if they are otherwise new, unused, undamaged, and returned in their original packaging with all included components.
