Yoshikazu Tanaka White #1 Damascus Gyuto 210mm No Handle
Experience the mastery of Yoshikazu Tanaka, an esteemed blacksmith with over 50 years of skill and a venerated figure within Sakai's elite blacksmith community. The White #1 Damascus Gyuto, measuring at 210mm, exhibits Tanaka's incredible attention to detail and exceptional forging prowess.
The Art of Yoshikazu Tanaka
Tanaka's uniqueness stems from his use of pine charcoal for quenching knives, resulting in a soft, gradual heating process. By limiting his daily production to a mere 30 knives, he ensures the highest level of precision and care for each piece. Tanaka is also among the few Sakai blacksmiths to utilize a tempering kiln for their knives, amplifying his respected heat treatment mastery.
Signature Design and Craftsmanship
This Gyuto knife boasts a distinct wavy cladding line between the hagane (core steel) and jigane (outer layer), revealing more core steel than most other knives. This feature is a signature of Tanaka's work. With its White #1 core steel and non-stainless Damascus cladding, this knife stands out as an extraordinary addition to any collection.
