Kyohei Shindo Santoku Knife
Hokkaido-born Kyohei Shindo realized his childhood dream of becoming a blacksmith by establishing his own shop in Tosa City, Kōchi Prefecture, at the age of 32. His knives, known for their tapering spine and incredibly thin cutting edge, feature a traditional Tosa lacquered kurouchi finish.
The out-of-box edge and performance of these knives are seldom matched for the price. The Santoku, or "knife of three virtues," is designed for slicing, dicing, and chopping, making it suitable for nearly anyone, especially those who prefer rock chopping or have limited kitchen space.
