The Tsunehisa AS line is a high-quality Japanese knife that boasts superior performance and craftsmanship. With a sharp and durable Aogami Super steel core, each knife is cladded in stainless steel for added protection and longevity. The blade has a kurouchi finish and features a tsuchime hammer finish with engraved kanji, making each blade unique.

Measuring 86mm in blade length and 215mm in total length, this knife has a blade thickness of 1.94mm and a height of 22.9mm. Weighing in at 49 grams, it's light and nimble, making it a joy to use. The blade has a hardness rating of 63-64 on the Rockwell hardness scale.

The knife is fitted with an oval rosewood handle for a smooth fit and finish, and is well-balanced for ease of use. While the Aogami Super steel is reactive and will develop a patina over time, it is still easy to care for with normal care instructions. The stainless steel cladding adds to the durability of the knife and helps retain its edge.

In conclusion, the Tsunehisa AS is an excellent value Japanese knife that is well made, impressively sharp, and offers a nice selection of handle and finish options. Whether you're a professional chef or a home cook, this knife is a great addition to any kitchen. Please refer to the carbon steel care guide below for proper care instructions.

Pairing knife

I like a small handle for a pairing knife (don't like western anymore) and this one was perfect. The blade is expectedly beautiful and effective.
