This is an excellent option for the professional kitchen. SRS13 is like a tougher version of SG2 Steel, and this workhorse is ready to perform 8 hours a day. We recommend a loaded strop to bring back the edge after long work sessions. We have had a very busy chef use this all day every day for 3 months before requiring re-sharpening.
