It is not well known that Tsuenhisa is actually a brand by Shibata Takayuki. He has teamed up with some excellent producers and hand selected some excellent lines, to serve his goal of bringing excellent Japanese knives to the world.

My New "Petty"

Tsunehisa AS Kurochi Tsuchime 135mm Petty arrived the other day. This is my 3rd purchase from Tokushu Knife and I couldn't be happier. The San Mai blade, stainless cladding on Aogami Super Steel is extremely sharp and attractive to look at. I gave the blade a few swipes on a Green Oxide Strop and it became scary sharp. The 2-piece wooden handle is comfortable and good looking. The 135mm length is, IMO, a little long for a 'Paring' knife. However, it is a very handy size for lots of kitchen cutting tasks. The overall blade shape is very similar to a small 'Chef's Knife'. Very handy. Www.Tokushuknife.com is an excellent company to deal with. Tony and Zach are great to deal with. Customer Service is second to none.

Overall, I'm extremely pleased with my purchase.

This is a great Japanese "Petty". Blade is done in the San Mai method. IDK a whole lot about the formulation of the steel, but it's advertised as "Aogami Super Steel" (carbon steel) clad with stainless steel. The 135mm blade is etched in ferric acid, which brings out the definition of the stainless and carbon steel boundary. Very attractive. Faux, Blacksmith hammer marks, give it an attractive 'handmade' look. The knife was very sharp out of the box. After a few swipes on a Green Oxide infused Strop the edge was 'scary sharp'! The blade reminds me of a 'mini' Chef's Knife. Very useful blade shape, but in a smaller form factor. The handle is a 2-piece wood, octagon shape. Very comfortable. Tokushu Knife states the blade is HRI 63 - 64. Pretty hard. I'll have to be careful and not chip the blade. I love the 'quirky' "Evidence" shipping box. This will be my 3rd purchase from Tokushu Knife and I couldn't be happier. Customer Service is excellent! Tony and Zach are great to deal with.

Overall, I'm very pleased with my purchase.
