Features
Made from Yasuki Silver #3 (Ginsan) steel, a high-quality stainless carbon steel, this blade offers excellent edge retention and ease of sharpening. The core steel is clad with soft stainless steel, following the traditional San Mai construction. With a hardness of 61±1 HRC, this knife ensures a long-lasting sharp edge and durability in demanding kitchen tasks.
