A: Absolutely. The 195 mm length is compact enough for everyday chopping, slicing, and dicing, yet long enough to handle proteins and large vegetables. It’s a great entry point into high-end Japanese knives without going too extreme in size.
Q: How should I maintain the Aogami Super core?
A: Treat the core as a high-carbon steel: hand wash immediately, dry fully, and optionally apply a thin coat of tsubaki (camellia) oil to prevent oxidation. The stainless cladding protects much of the blade from rust, but the core will patina over time (which many users appreciate).
Q: How does Denka differ from other Aogami Super knives?
A: Fujiwara’s in-house heat treatment elevates Denka’s hardness to about 65–66 HRC, pushing the limits of what Aogami Super can achieve. This yields superb sharpness retention, a biting feel, and consistency. The tradeoff is that it demands a bit more sharpening care than lower-grade steels, but for many users, it’s worth it.
