Overview
If you are not yet familiar with the work of Takeshi Saji, it represents functional art at its finest. Saji Hamono specializes in fully functional Japanese knives that also stand out as display-worthy pieces. I have had my eyes on these for a while and am eager to see one paired with a full black horn handle.
No, it’s not standard VG-10. The core steel here is VG-10W—an advanced variant of the renowned VG-10, enriched with tungsten. This composition fortifies durability while maintaining high corrosion resistance and sustaining a 62 Rockwell Hardness rating.
Nakiri knives excel at vegetable prep. With a proper professional sharpening and a gentle push-cut, this blade will glide effortlessly through produce. Please note that Saji-san’s knives typically arrive needing a fresh edge. We recommend sharpening it before first use or allowing us to handle that step for you.
Common Questions
Q: Is a Nakiri primarily for vegetables?
A: Yes. Its straight edge profile and tall blade height are designed to maximize contact with the cutting board, making it perfect for slicing and dicing produce.
Q: Does the tungsten-enriched VG-10W steel require special care?
A: It’s rust-resistant, so standard care practices (drying the blade after use and storing it safely) are sufficient. Occasional sharpening will maintain its top-tier performance.
