An Advanced Core for Enhanced Durability
No, not VG-10. The core steel is VG-10W steel, an advanced variant of the renowned VG-10, enriched with tungsten. This not only fortifies its durability but also retains its high corrosion resistance, all while sustaining a 62 Rockwell Hardness.
The Nakiri
Nakiri knives are made for vegetables. After a Zach Peter's Professional Sharpening touch-up, a gentle push-cut, and it will fall through food. We recommend adding Zach Peter's hand sharpening to bring this to its best from day 1. Saji-san's knives are not shipped out with their edges at their best, so either prepare to sharpen it, or let us do it for you.
