The name Takeshi Saji is synonymous with Takefu Knife Village. He was one of the founding members of this kitchen knife creating focused village, along with other knife legends such as the now retired Katsushige Anryu and the late Masami Asai.
Though Saji-san has a variety of knife lines he works on, his flagship is definitely his blue (aogami) #2 steel rainbow Damascus line. The intermittent layers of copper, brass, and nickel are iconically the reason this line is called rainbow Damascus, just see for yourself. What's more? Some knife enthusiasts will give these knives a coffee etch to add even more contrast to these intermittent layers than what you see in the images.
