Hand-forged in Echizen, finished in Tennessee—experience the Takeshi Saji Rainbow Damascus Gyuto 180 mm, a pocket-sized powerhouse dressed in copper, brass, and nickel.
Why it belongs on your board
- Founding master of Takefu Knife Village: Saji-san helped build the co-op that birthed modern Echizen craftsmanship.
- Signature Rainbow Damascus: 32 alternating layers of copper, brass, and nickel over a Blue #2 core—etched for a holographic, coffee-rich patina.
- Perfect 180 mm length: Nimble like a santoku, tall like a full gyuto—ideal for home prep and line-cook stations alike.
Blade & build
• Steel: Aogami #2 (Blue #2), hardened to 62–63 HRC.
• Construction: San-mai hammer-forged, laser-engraved kanji.
• Grind: 50/50 symmetrical edge for left & right-hand use.
Choose your handle
Select a black water-buffalo horn wa handle or any bespoke option below—we’ll install and balance it in-house (1-2 day lead time).
Care & maintenance
Blue #2 takes a razor edge but will patina. Rinse, hand-dry, and oil lightly after use. Add our professional sharpening service and we’ll ship it honed to 2 µm for out-of-box performance.
Specs
- Edge length: 180 mm • Heel height: 46 mm • Spine: 2.1 mm
- Weight (blade only): ~135 g
- HRC: 62–63 • Edge grind: even 15°/side
Who is Takeshi Saji?
