As always, Takamura provides a delightful tool to work with. I will admit that the 210mm is kind of my favorite, but the 180mm is such a dexterous and versatile blade. I know a couple accomplished chefs who actually prefer this length.

Incredibly sharp knife. You really have to pay far more attention when using this knife. Definately not for beginners and careless chefs.

First I am so impressed by Tony's knowledge, I was going to order a saya for my takamura knife and he advised not to get a saya but instead use a blade guard so my knife would not get scratches. Tony is willing to make a little less money and rather know what I should get to protect my knife. Also that takamura sg2 180mm gyuto is a Lazer. That knife is amazing and worth the money. I love buying knives from tokushuknife.
