Itsuo Doi Homura Kogetsu Aogami #2 Gyuto 210mm
Handcrafted by esteemed Sakai blacksmith Itsuo Doi, the Homura Kogetsu Gyuto continues a celebrated family tradition of Japanese knifemaking. Itsuo Doi is the son of legendary blacksmith Keijiro Doi, and their family has produced exceptional hand-forged knives for more than 70 years.
The Doi family emblem is engraved near the maker's mark on the blade, signifying its heritage and authenticity. This 210mm gyuto is supplied with a fitted saya for protection during storage and transport.
Itsuo Doi uses a specialized low-temperature forge-welding process designed to minimize carbon migration between the Aogami #2 core and its cladding. This careful forging and heat treatment contribute to the blade's excellent sharpening response, edge quality, and cutting performance.

Knives sharpened by Tokushu Knife or fitted with a custom handle remain eligible if they are otherwise new, unused, undamaged, and returned in their original packaging with all included components.
