It's really easy, if you want a kitchen knife that is Damascus clad and captures over 350 years of smithing experience, your road ends at Nigara Hamono. A cutlery and tool shop out of Aomori prefecture in Northern Japan, Nigara Hamono not only has the years of experience to back up their products but is diversified in their crafts also making steel beams for buildings.
When you think of Damascus, I'm sure like all of us you visualize some randomized swirling pattern. This series however, Anmon Kurozome, is nothing but a predictable masterwork. Nigara Hamono sought inspiration from the Anmon Falls also located in Aomori, to produce a Damascus pattern that reminded them of this landscape. Nothing beats have a gorgeous Damascus pattern and not having to worry about it tarnishing over time. And that's because the core steel is SG2 and the knife is stainless clad. Enjoy the unparalleled sharpness of a high speed powdered steel like SG2 without having to worry about compromising the look of your knife over time.
Sakimaru typically refers to the knife tip more than it is telling about the knife shape. As an example, a kiritsuke has a k-tip, as does a bunka, as does a gyuto labelled 'k-tip' gyuto. Think of a sakimaru as just that, telling of the tip shape. In this case swooping up from the cutting edge towards the spine at an angle, like that of a samurai sword (tanto tip).
Here, we have a gorgeous 300mm slicer with a sakimaru tip. Perfect for your large roasts or large portions of sashimi-grade fish. These knives are particularly functional within their range of use, but let's be honest, they are also incredible show pieces.
