Moritaka Knives 180mm Tall Nakiri

The Tall Nakiri by Moritaka Hamono merges the functionality of a Chinese cleaver with the precision of a classic nakiri, offering exceptional value without the bulk. Crafted in Yatsushiro, Japan, this knife features an impressive HRC rating of 65, using traditional hammer forging techniques. The Aogami Super core steel paired with soft iron cladding enhances cutting performance and makes for easy sharpening. For optimal edge maintenance, we recommend our professional sharpening service.

With a distinctive kurouchi finish and an octagonal walnut handle, this knife is not only a pleasure to use but also a stunning addition to any kitchen. Moritaka is well-regarded for the flat profile on their nakiri knives, designed specifically for smooth push cutting, making this one of the best nakiris on the market.

Great service. The Moritaka knives are superb. Even with everyday use they remain razor sharp. I'm buying more products from Tokushu Knife.

Great knife if you're looking for a larger nakiri.

I have several Moritaka knives and this is another great choice. They aren't flashy, but the steel treatment holds up and the Aogami Super steel is outstanding for sharpness and edge retention. Great craftsmanship.

Handle is comfortable and standard shape, size. Fitment of handle done well.

Were I feel the 180mm size shines is when doing quantity vegetable prepping/chopping. Just a bit more blade length than the default 165mm, without much more weight penalty. The added blade height can help with hand/knuckle clearance to not bump, smash your knuckles.

Only possible negative is fitting in some knife blocks. The blade height might not allow fitment in some slots. So measure before hand if that's a concern.
