The Tsuenhisa SRS13 Sujihiki Slicer features high-speed powdered steel (HSPS), known for its outstanding corrosion resistance. Its ultra-fine grain structure and carbide composition maintain extreme sharpness, surpassing other HSPS like SG2/R2.
Maintain the edge with a Suehiro CERAX 1K whetstone and regular stropping using diamond compound. This care allows the edge to remain sharp for up to 3 months of heavy use, or over a year for home cooks.
