Introducing the Buho Funayuki 165mm: A Masterful Fusion of Gyuto and Santoku
We are proud to present the exquisite Buho Funayuki 165mm, a general-purpose knife skillfully crafted by master blacksmith Takeo Murata. Occupying a central spot in the Buho lineup, this unique blade merges the best qualities of a Gyuto and a Santoku, offering versatility and precision for a wide range of kitchen tasks.
Murata-san has chosen Blue Paper #1 carbon steel for this masterpiece, showcasing his remarkable expertise in forging incredibly sharp edges, fine grinds, and precise balance. With a hardness of 61-63 Rockwell, the steel is encased in a stunning kurouchi finish. This black hammer finish not only enhances the knife's aesthetic appeal but also makes maintenance a breeze.
The octagonal ho wood Wa handle complements the blade beautifully, offering an excellent grip and further improving the overall balance of this fine instrument.
*Please note that the tips on these knives are ground off at an angle. This is intentional. Refer to the second photo for a clearer view.
