Don't forget these...

For those that venture outside of Japanese-made kitchen knives, you need only scour the internet for a few minutes before you eventually come across the brand Dao Vua. Who are they and why have they taken the internet and market by storm? The story of Dao Vua and their kitchen knife price point is really where it begins.

Here is the short and dirty version of their humble beginnings, which you can easily find online. Dao Vua knives are handmade in Hanoi, Vietnam by barefoot Vietnamese bladesmiths, using recycled materials, from what they call leaf spring steel. At the price point of these knives, they are seriously impressive from build to sharpness. Though, they may not be for you if you struggle to take care of your knives. Being carbon steel even if with a kurouchi finish, they sharpen easily, but also oxidize easily so care should be taken to maintain a dry knife. 

Once again with the third iteration to their knives "V3", Dao Vua has addressed another issue users have sometimes worried about. If the metal used is from recycled materials, how can consistency of the final product be assured? Enter sourcing 52100 carbon steel from the US with this V3 line. SO, sounds like every time a end product user has a demand it seems to be met. What else would you like to see from this exciting Vietnamese knife company?

Often times when people hear Chinese cleaver, they think of a knife capable of spatchcocking a chicken - this isn't that! This is intended to be a vegetable knife, or as the Chinese call their vegetable cleaver "caidao". It is essentially a very tall nakiri, with an approachable length of 200mm and a relatively thick spine which means this forward heavy knife can bulldoze your veg like it's nobodies business.

    DAO VUA V3 52100 Chinese Cleaver 200mm

    This has become my favorite kitchen knife. I'm a big fan of 52100 Ball Bearing steel. I have several handforged knives made from it. The DAO VUA V3 52100 Chinese Cleaver 200mm came extremely sharp, I polished the edge on a green infused strop and it became 'scary sharp'. If, you're looking for a perfectly finished blade this Asian Chef knife isn't for you. It has some 'character' marks leftover from the forging process. I actually like that. The handle it came with is comfortable and attractive. I used to carbon steel, so maintenance is no issue. Zack is a great guy to deal with. I would highly recommend this 'Chinese Chef Knife' to anyone wanting an entry level Asian style vegetable Cleaver.
