DAO VUA 180mm V3 52100 Kiri Cleaver
Among those who explore beyond Japanese-made kitchen knives, the brand Dao Vua is often a name encountered on internet. Originating from Hanoi, Vietnam, Dao Vua knives are impressively handcrafted by barefoot Vietnamese bladesmiths, using what they term as leaf spring steel, essentially recycled materials. Despite their humble and sustainable production process, these knives stand out due to their high build quality and sharpness, offered at a very affordable price point. However, they require careful maintenance, as being carbon steel with a kurouchi finish, they oxidize easily.
Dao Vua has introduced its third iteration "V3", to address concerns regarding the consistency of their final products, made from recycled materials. The V3 line now sources 52100 carbon steel from the US, ensuring the uniformity and quality of the finished product.

This is a well crafted knife at a very good price point.
Really like this knife. My sixth DAO VUA knife. The knife has some "heft" to it as compared a traditional knife which makes chopping large and hard vegetables a breeze. Fairly sharp out of the box but a few minutes on the 3000 grit stone and then stroping with green compound and razor sharp. Being a cleaver the blade a bit thick behind the edge but keep it sharp and it is a really good chopper.

just got it and love it. great price point and made brunoise super fun. i saw it sold out and wish i could buy another. yee hawww
I love this cleaver. Weight is ideal, not too light not too heavy. I have encountered issues with its sharpness, but it is more a problem of a sharpening service I've ordered. No fault of the cleaver itself.
