The mizu (water) quenching technique used here is particularly challenging, adding to the knife's prestige and performance, as well as explaining its higher price point.
Satoshi Nakagawa has mastered this process, forging a stunning honyaki from shirogami (white) steel #2. His blades are known for being exceptionally thin, ensuring effortless cutting and enhanced precision. This gyuto boasts a remarkable HRC of 63, attributed to the water quenching process, which, although risky, results in an extraordinary tool when executed perfectly.
