The Hatsukokoro Removable Handle Frying Pan 22cm is a compact, hand-forged Japanese iron pan made in Niigata, Japan from 100% pig iron. It brings the heat response and durability of traditional iron cookware into a smart, space-saving design with a removable tension-fit handle. For small kitchens, camping, boat cooking, travel setups, or oven finishing, this 22cm / 8.5" pan is practical, sturdy, and genuinely fun to use.
Pig iron, also known as crude iron, is a raw form of iron with a high carbon content. Like carbon steel and cast iron cookware, this pan can develop a beautiful dark patina with proper seasoning and use. It will also tarnish or rust if left wet, so it should be treated as a serious piece of traditional iron cookware: heat it gradually, season it properly, dry it completely, and store it with a very thin coat of food-safe oil.
At Tokushu Knife, we recommend treating this pan like a mini wok. Heat the pan, add oil, coat the surface, discard excess oil if needed, heat again, then cook. The removable handle makes it especially useful for finishing food in the oven while the handle stays cool on the counter. To help avoid warping, bring the pan up to temperature gradually on any stove type, especially electric or induction cooktops.
How To Season This Pan
Before first use, wash the pan and dry it completely. Place it over medium heat and allow the surface to discolor, making sure heat reaches every part of the pan. While the pan is still warm, use a paper towel with a very small amount of cooking oil, about 1/2 teaspoon, and wipe the oil over the inside and outside of the pan. Do not leave thick oil sitting on the surface. Put the pan back over heat until it darkens. This begins the seasoning layer and helps the pan build a natural patina over time.
After cooking, dry the pan until it is bone dry. If it will be stored in a damp environment, such as on a boat, be extra careful: a thin layer of oil and a short stay in a warm oven is ideal. Regular use will continue to improve the seasoning and help create a more naturally nonstick cooking surface.

Q: Is this pan carbon steel or cast iron?
A: It is made from 100% pig iron, a high-carbon crude iron material. In daily use, care for it similarly to carbon steel or cast iron cookware: season it, keep it dry, and oil it lightly before storage.
Q: Can I use this pan on an electric or induction stove?
A: Yes, but heat it gradually. Thin traditional iron cookware can warp if shocked with sudden high heat, especially on electric or induction ranges. Start at medium heat and step up slowly when higher heat is needed.
Q: Why does the handle come off?
A: The removable handle makes the pan easier to store, pack, and use in tight spaces. It also allows the pan to go into the oven while the handle stays off and cool on the counter.
Q: How do I prevent rust?
A: Never store the pan wet. After washing, heat-dry it completely, then apply a very thin layer of food-grade oil. If storing in a humid place, make sure the pan is bone dry before putting it away.
