The Secret of VG-XEOS Steel

In an era where cutlery demands have evolved beyond just sharpness, the need for rust-resistance, tenacity, and durability has never been higher. Enter VG-XEOS - a revolutionary steel that promises not just to meet, but to redefine these expectations.

"With changes in hygiene awareness and further diversification of dietary habits, cutlery is required not only to be sharp, but also to be rust-resistant and tenacious, with high levels of contradictory characteristics such as hardness/strength and corrosion resistance. We have developed a new grade of steel for blades that combines high corrosion resistance and high hardness at a high dimension, which had been difficult to achieve in the past, with a fine microstructure created by a special melting method that improves wear resistance, strength, and quenching properties. A newly developed material that combines corrosion resistance and hardness (X). A new steel grade that heralds the dawn of a new stage in cutlery. (EOS) This is VG XEOS."

The proprietary undisclosed formula of VG-XEOS steel sets a new benchmark in the world of cutlery, making this Santoku a must-have for every culinary enthusiast.

My first love returns...

I bought this knife primarily because I was curious about the steel. I've had it for a month now and I find myself reaching for it pretty regularly. The knife has excellent out of the box sharpness and it looks wonderfully classy with a shattered carbon handle. Santoku was the first shape I fell in love with years ago. It's so nice to have a high quality santoku back in the mix.
