Don't forget these...

Allow us to help since everyone always asks this question. No Shigeki Tanaka is not related to Yoshikazu Tanaka. They are different smiths working out of different cities - Meki city for Shigeki-san - with different approaches to knives. Shigeki Tanaka knives are easily recognizable as they exude more of a workhorse appearance, and have remarkable performance.

For some reason or another, lots of knife enthusiasts gravitate at one point towards knives made out of silver (gin) #3. It is a steel often found in the construction of some honyakis and which really appreciates a HRC of 59-61, making it tough and resilient. These silver #3 Shigeki Tanaka knives have the classic nashiji (pear skin) finish.

Gyuto, translates to "cow sword". I mean at 270mm, it might as well be a cow sword! If you are looking at this knife, and it is your first ever Japanese kitchen knife, close the browser now and turn back. A knife this length, particularly a gyuto isn't for those that aren't yet accustomed to Japanese kitchen knives. If on the other hand you're looking at this and know exactly what this represents, then I guess this is the knife for you isn't it?
