It's really easy, if you want a kitchen knife that is Damascus clad and captures over 350 years of smithing experience, your road ends at Nigara Hamono. A cutlery and tool shop out of Aomori prefecture in Northern Japan, Nigara Hamono not only has the years of experience to back up their products, but is diversified in their crafts also making steel beams for buildings.

When you think of Damascus, I'm sure like all of us you visualize some randomized swirling pattern. This series however, Anmon Kurozome, is nothing but a predictable masterwork. Nigara Hamono sought inspiration from the Anmon Falls also located in Aomori, to product a Damascus pattern that reminded them of this landscape. The whole mesmerizing pattern is clad atop a core steel of Silver 3, also known as ginsanko (gin-san-ko: silver-three-steel). It is a steel made by Hitachi Japan, specifically for tools and kitchen knives.

Silver 3 is similar to VG10 with approximately the same percentage of carbon C0.95-1.10. However, knife enthusiasts tend to prefer it to VG10 because it feels sharper.

A yanagiba is one of the most traditional knives in Japan, and is almost always single bevel, meant for slicing raw fish in one smooth pull, and can be found in lengths exceeding 250mm. But at 330mm, this yanagiba can sashimi some of the largest fish you'll ever have the chance of even getting your hands on. Bonus, it's a traditional knife with a twist. This one has a k-tip! Which means once you're done slicing your humongous fish, you can score the flesh with the tip. Then maybe a quick char and call it a day.
