The Moritaka Family has a rich history in the blacksmith trade beginning over 700 years ago. They have transitioned from making weapons for famous warriors, to making famous kitchen knives, for anyone lucky enough to find them in stock. When you use one it is obvious they know what they are doing. They are actually one of the few blacksmiths that still forge weld their own steel. The Moritaka Family is know for their skillful heat treatment of Aogami or Blue #2 steel, and Aogami Super or Blue Super Steel. They make some exceptional cutlery. I wish it was easier to keep these in stock, each one is still handmade by a traditional process by the Moritaka Family.
