The Homura series is Doi-san’s main line of traditionally hammer forged and hand ground double bevel knives. It consists of three different subsidies, the newest if which is the Guren or “Red Lotus” Series. The Gyuto features a relatively flat profile and comfortable blade height of 55mm. The Petty Follows the lines of the Gyuto. For the third knife, a rare style of vegetable knife originating from the Tokyo area with a slightly forward oriented profile.
A highlight of Doi-san’s knives is the skillful treatment of the steel. A process using low - temperature cladding minimizes carbon transfer from the core steel to the cladding. This translates in to a difference you can feel on the stones and when cutting.
