Master Saji makes an affordable line of single edge knives out of Ginsan or Silver #3, a stainless steel that sharpens, feels and behaves like carbon steel. The only down side is, edge retention, which matches White #2, so like White #2, if you sharpen your own knives, it's a dream. It does come sharp out of the box.
We have paired this with a one of a kind custom handle by Daniel Ryan. It is a piece of maple burl dyed to look a bit like fire.
