Some of the knives we carry at Tokushu are from blacksmiths who had a reputation before forging their own kitchen knives. One such example is Kei Kobayashi. Prior to making his own kitchen knives, his reputation was rooted in being a very talented sharpener and polisher out of Seki city, having worked with some of the top blacksmiths in the region.
Now instead, Kobayashi-san holds the reigns on his own lines of knives made from a very high quality powdered stainless steel known as SG2 or R2 . His knives are incredibly thin, and with a simplistic Damascus pattern, marry very well with any stock or custom handle.
