The Moritaka family is currently the 28th generation of knifemakers, spanning over 700 years. They are one of the oldest in the world. They are renowned for their flawless treatment of Aogami Super Steel, and have created a masterpiece which stays sharp for up to a year without resharpening. This is the knife I keep reaching for as it brings joy to the cutting board.
This includes an upgraded octagonal walnut handle, and optional sharpening service, which we guarantee will be the sharpest knife you have ever experienced out of the box.
Please use caution with this very thin and hard tool and use caution not to push side to side when cutting. Not recommend for hard squash. Use standard care for non stainless Japanese Knifes.
